With the new year, everyone’s new year’s resolutions are filled with ways to be healthier and fitter. Just because you want to be healthy, you don’t have to sacrifice your favourite foods too! Here’s a great healthy and easy recipe for jalapeño poppers.
Makes: 24
Ingredients:
- 12 jalapeños (or green chillies)
- 120g light cream cheese
- 5 spring onions (green part only, sliced)
- 60g of light cheddar (grated)
- 1 egg (beaten)
- 70g of panko breadcrumbs
- 1/8 tsp of paprika
- 1/8 tsp of chilli powder
- 1/8 tsp of garlic powder
- salt and pepper
- oil spray
Method:
- Halve the peppers and hollow out (deseeded and membranes removed)
- In a bowl, mix the chopped spring onions, cream cheese and cheddar
- Stuff the peppers with the cream cheese mixture
- Dip the peppers in the egg
- In a separate bowl, mix the panko crumbs, garlic powder, paprika, chilli powder, salt and pepper together
- Cover the egg washed peppers in the panko mixture
- Place the peppers on grease-proof pepper and spray with oil
- Bake for 20-25 minutes at 190C/Gas Mark 5 until golden brown and the cheese is oozing out
